Clam Chowder at Castle Hill Inn

Not only is clam chowder the epitome of comfort, but it’s also a Newport staple, which means we know how to make it and we know how to make it exceptionally well.

But just for you, we’ll share the recipe.

1 quart chopped clams
2 stalks celery, washed and diced
4 yukon gold potatoes, peeled and diced small
1 medium Spanish onion, small diced
2 cups chopped bacon, small diced
½ cup dry sherry
1 quart clam juice
2 cups whole milk
½ pound ap flour
½ pound unsalted butter
Kosher salt to taste
Ground white pepper to taste
Fresh dill to taste

In a large stock pot over medium heat add butter, bacon and sauté until crispy. Add onions and celery, sauté until softened, but not browned.  Add flour and create a roux. Cook until flour absorbs all liquid.  Add clam juice and potatoes, make sure potatoes are submerged in the pot, cook until tender and add clams. Bring to a boil, reduce heat to a low simmer add sherry and milk. Adjust seasoning with salt, pepper and fresh dill.
